Tastes of the past and present
Bobiči is a traditional Istrian stew made from young corn, beans, and potatoes, connecting the past and present of Istria with its authentic flavor.
Ingridients:
- Five cobs of young corn
- approx. 400 g of brown beans
- 4 potatoes
- a few cloves of garlic, a bunch of parsley
- 2 large peeled tomatoes (or tomato purée)
- smoked pork or prosciutto bone
- salt, pepper, olive oil for drizzling
Preparation
In a large pot, sauté chopped garlic and parsley in olive oil. Add peeled and washed potatoes cut into pieces, beans, corn cobs, smoked pork or a prosciutto bone, peeled and chopped tomatoes or tomato purée, salt, pepper, and water. Cook slowly over medium heat for 2 to 3 hours.
When the bobiči are nearly done, remove some potatoes from the pot, mash them with a spoon, and return them to the pot to thicken the stew.
