Tastes of the past and present

Bobiči is a traditional Istrian stew made from young corn, beans, and potatoes, connecting the past and present of Istria with its authentic flavor.

Ingridients:

  • Five cobs of young corn
  • approx. 400 g of brown beans
  • 4 potatoes
  • a few cloves of garlic, a bunch of parsley
  • 2 large peeled tomatoes (or tomato purée)
  • smoked pork or prosciutto bone
  • salt, pepper, olive oil for drizzling

Preparation


In a large pot, sauté chopped garlic and parsley in olive oil. Add peeled and washed potatoes cut into pieces, beans, corn cobs, smoked pork or a prosciutto bone, peeled and chopped tomatoes or tomato purée, salt, pepper, and water. Cook slowly over medium heat for 2 to 3 hours.

When the bobiči are nearly done, remove some potatoes from the pot, mash them with a spoon, and return them to the pot to thicken the stew.
