Sweet Istrian temptresses
Hroštule are a crispy Istrian dessert, fried and dusted with sugar, while Refosco pancakes impress with their wine batter and apple filling.
Ingridients:
Ingredients for Hroštule:
- 500 g white flour
- 100 g sugar
- 0.5 dl olive oil
- a small glass of grape pomace brandy (žganje)
- a pinch of salt
- oil for frying
- sugar for sprinkling
Ingredients for Refosco Pancakes:
- eggs
- flour
- a pinch of salt
- a few tablespoons of milk
- Refosco wine
- apples
- sugar
- cinnamon
- olive oil
- butter
- breadcrumbs
- vanilla sugar
Preparation
Hroštule
Put the flour on the table and make a well in the center, into which you add sugar, olive oil, grape pomace brandy, and a pinch of salt. Knead the dough and divide it into several parts, which are then rolled out, cut into strips, and shaped as desired. Fry in plenty of hot oil until golden brown. Then remove them from the pan and sprinkle with powdered sugar.
Refosco pancakes
Prepare the batter by beating eggs, salt, and a bit of milk. Then alternately add flour and Refosco wine, whisking until you get a batter of the right consistency.
For the filling, sauté grated apples with sugar and cinnamon (apple compote), or use jam instead (e.g., plum jam).
Cook the pancakes with a drop of olive oil, spread with filling, and roll them up. Top them with a sauce made by sautéing breadcrumbs in butter, then adding vanilla sugar, pouring in Refosco wine, mixing well, and cooking briefly.
