Homemade soup with the Istrian character

Istrian garlic soup is a traditional Istrian dish made from garlic, potatoes, and spices, celebrated for its simplicity and rich flavor.

Ingridients:

  • 20 cloves of garlic
  • 4 teaspoons of cornmeal
  • a piece of pancetta
  • 1 egg
  • hard cheese
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 2 liters of water
  • salt

Preparation


We wash the chopped garlic in warm water, drain it, and sauté it together with pancetta in lukewarm fat. Once it becomes aromatic, we add sifted cornmeal, fry it briefly, then pour in hot water and cook for half an hour. Finally, we add a beaten egg, a pinch of salt, freshly grated cheese, and a few drops of olive oil. Garnish with fried garlic and pancetta.
