Istrian mussels delicacy

Mussels alla busara is a simple and delicious Istrian seafood dish made with mussels, wine, garlic, and parsley, popular among seafood enthusiasts.

Ingridients:

  • 1 kg mussels
  • 4 tablespoons olive oil
  • 3–4 tablespoons breadcrumbs
  • 1.5 dl dry white wine
  • Piran salt
  • 3–5 cloves of garlic
  • 1 bunch of parsley

Preparation


Handle the mussels with great care. Fresh mussels must be closed.
Clean the mussels thoroughly. Peel and finely chop the garlic. Strip the parsley leaves and chop them finely.

In a wide pot, heat the oil and briefly sauté the chopped garlic.
Add a tablespoon of breadcrumbs, half of the chopped parsley, and the white wine, then bring to a boil.

Add the mussels to the pot and sprinkle them with the remaining parsley. Cover the pot and cook the mussels over high heat for 10 minutes, shaking the pot a few times during cooking.

Transfer the mussels to a preheated bowl. Add the remaining breadcrumbs and a pinch of salt to the sauce. Cook for another minute or two, then pour the sauce over the mussels.
