Istrian classic with peas and pancetta
Riži-biži is a popular Istrian rice and pea dish that brings authentic Mediterranean flavours to your table with its simplicity and taste.
Ingridients:
- 150–200 g of pork pancetta
- ½ kg of fresh shelled peas
- salt
- pepper
- broth or water
- a handful of rice per person
Preparation
Place the sliced pancetta and the chopped garlic in a small saucepan and cook until slightly browned or peppered. Add a little water and cook for a quarter of an hour before adding the shelled peas, salt, pepper, broth or water and cooking until soft. Just before the end, add a handful of rice per person. When the rice is cooked, the dish is ready. Serve with grated Parmesan cheese.
