An Istrian classic in a tangy wine and vinegar marinade
Sardines in “Šavor” is a traditional Istrian dish in which fried sardines are marinated in an onion sauce with wine, vinegar, and herbs for a rich, fresh flavor.
Ingridients:
- 3/4 kg cleaned sardines
- white flour
- olive oil
- 1 large onion, garlic
- 2 dl wine vinegar
- 1/8 l white wine (Malvasia)
- salt, pepper
- bay leaf and rosemary
Preparation
Coat the sardines in flour and fry them in olive oil. Once they are well fried, place them in a deep dish or another container (preferably clay, but never metal!).
In the remaining oil, sauté sliced onion and chopped garlic, add bay leaves, rosemary, salt and pepper, mix well, and pour in the wine vinegar and white wine. When it comes to a boil, let it simmer briefly.
Pour the mixture over the sardines until they are covered. Place them in the refrigerator and let them sit for some time or a few days.
Serve with salad.
